A Place Like No Other

Our oyster farm sits quietly within the sheltered estuaries and sun-dappled bays of the NSW Sapphire Coast – a hidden stretch of wild, coastal beauty, where the air carries the scent of salt and eucalyptus.

Tucked into the far, south-eastern corner of NSW, Merimbula Lake is one of Australia’s most revered waterways with ideal natural conditions for producing oysters of exceptional quality. The Lake opens to the ocean through a tidal channel that breathes life into the system twice each day, flushing it with cool, oxygenated seawater from the continental shelf. Meanwhile, surrounding bushland and low-impact catchments help keep the estuary clear, unspoiled, and naturally nutrient-rich.

Merimbula has earned its reputation for esteemed oysters not through promotion, but through consistently exceptional product. For generations, it’s been favoured by chefs, oyster judges, and discerning growers who know the lake’s capacity to produce some of our country’s finest oysters.

We feel privileged to farm here, among a like-minded and supportive oyster farming community, raising our oysters in a place where nature does most of the work, and where every shell reflects the purity of its surroundings — clean, vibrant, and full of character.
